1/2 C butter
1-1/2 C white sugar
2 eggs
3 very ripe bananas, mashed
8 ounces sour cream
1 tsp vanilla extract
1 tsp ground cinnamon
1/2 tsp salt
1-1/2 tsp baking soda
2-1/2 cups all-purpose flour
3 T unsweetened cocoa powder
1/2 C chocolate chips (optional)
1/2 cup chopped walnuts (optional)

Preheat oven to 300 degrees F. Grease two loaf pans. In a large bowl, cream butter and 3 cups sugar. Mix in eggs, mashed bananas, sour cream, vanilla and cinnamon.
Whisk separately salt, baking soda, flour and cocoa. Mix into wet ingredients. Stir in nuts and chocolate chips, if desired. Divide into prepared pans. Bake for 1 hour, until a toothpick inserted in center comes out clean.

This is THE banana bread recipe. I have been through a lot of them but this is the one that is good enough to give as a gift. It is slightly adapted from the allrecipes.com version by Esther Nelson. You can leave out the cocoa if you like, but I don't recommend that. It is a very light chocolate.

You may also add some quick oats to health it up a bit, if you like.
