3 c flour
1 tsp baking soda
1 tsp salt
1 c walnuts- chopped, optional
3 c apples- peeled, cored, chopped
1 c vegetable / canola oil
2 c sugar
3 eggs
2 tsp cinnamon

Directions:
Directions:
Preheat oven to 300
Spray 2 loaf pans

Mix flour, soda, salt, walnuts and apples in large bowl.
In small bowl, whisk together oil, sugar, eggs and cinnamon.
Add wet ingredients to flour mixture just until moistened.
Pour into prepared pans.

Bake about 90 minutes, until toothpick comes out clean from center.
Cool in pans for 10 minutes then remove loaf to wire rack to finish cooling.
