Garlic Potatoes, By Grill or Oven Recipe

Ingredients: 4 medium potatoes cut into bite sized pieces (about 5cups) can leave skin on. We have used RedSkin potatoes the most but Yukon minis or Yukons or White will work too) 1 small onion or shallots in v.thin wedges 2 Tbsp Canola Oil 1/2 tsp garlic powder 1 tsp salt 1/4 tsp blk pepper Season with Dill, Parsley and/or Rosemary or Tarragon May need to add some more salt/seasoning at the end.

Directions:Preheat oven to 450º or Grill to Medium-High Combine all ingredients in large bowl and toss to coat.
Use Heavy duty aluminum foil/two layers. Pour potatoes into center and bring up sides of foil creating inner and outer fold.
Bake in oven on a cookie sheet or Or on grill (no sheet) for 20-25mins on medium high covered grill or until potatos are tender. The edges of the potatoes should start to get brown but not blacken. |
