1 1/2 c. brown sugar
1 egg
1 c. buttermilk
1/2 c. salad oil or applesauce
1 1/2 c. chopped rhubarb
2 1/2 c. flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt

Directions:
Directions:
Mix first 5 ingredients together. Stir in rhubarb, flour, baking soda, baking powder, and salt.

Put mix inmuffing tin. Mix sugar, cinnamon in a dish. Sprinkle on top before baking.

Bake at 375º for 15 to 20 minutes.
