2 lbs. high quality beef stew
Onions
Carrots
Celery
Potatoes
Cut up an use amounts to suit your needs. I leave pieces quite large

2 tsp. salt
1/4 tsp. pepper
2 Tbsp. Minute Tapioca
1 Tbsp. sugar
2/3 cup of tomato or V8 juice. I frequently double the amount of juice depending on the quantity of vegetables

Directions:
Place meat in large casserole. Place vegetables on top. Mix seasonings in bowl and sprinkle over all. Pour juice over all cover tightly with lid. Bake in 250 to 300 oven for 4 to 5 hours. DO NOT PEEK!

This recipe came from Duane’s “Auntie Irene”. She lived in a little suburb called Naperville which seemed at the end of the earth back in the days when Duane and I were dating. Little did we know that years later we would be living in Lisle and our children would be attending Naperville schools.
