1 can (8 ounces) crushed pineapple, drained
4 large eggs
1 cup white sugar
1 cup brown sugar
1 cup oil
2 teaspoons vanilla
2 cups flour
2 teaspoons baking soda
1/4 teaspoon salt
2 teaspoons cinnamon
1/8 teaspoon cloves
1 cup chopped pecans
2 cups shredded carrots
Combine
Frosting:
8 ounces cream cheese, softened
1/4 cup butter, softened
1 teaspoon vanilla
3 tablespoons orange juice
1/4 cup heavy cream
3 to 3 1/2 cups powdered sugar

Directions:
Directions:
Combine pineapple and eggs. Beat in sugars, oil, and vanilla, followed by the dry ingredients. Fold in pecans and carrots.

Spread the batter in a greased 9 x 13" pan. Bake at 350 for about 35 to 40 minutes or until done. Cool completely.

Cream together cream cheese, butter, and vanilla until fluffy. Add orange juice and icing sugar until mixture is light and fluffy.

Spread the frosting evenly over the cake, and sprinkle with chopped pecans.
