3 ears corn
1 small clove garlic
cup cold water
3 T. lemon juice
2 teas. Dijon mustard

Directions:
* Cook corn ears - husks & silks removed - in enough boiling water to cover
* Boil for 2 minutes - drain - cool slightly and cut corn from the cob
* In a blender or food processor, combine corn, garlic, and water. Cover & blend until
smooth
* Press mixture through a fine-mesh sieve into a bowl -- discard solids
* Whisk this mixture with the lemon juice, mustard
* Season with salt & pepper to taste
