3 egg whites
1 cup sugar
1 tsp vanilla
1 cup chopped pecans
22 Ritz crackers, broken into small pieces
Whipped cream or Cool Whip

Buttered 10” pie pan
Grated German chocolate

Directions:
Directions:
Beat egg whites stiff, add sugar slowly, then add vanilla.
Stir pecans and crackers slowly into the egg white mixture. Pour mixture into pie pan.
Bake at 300º for 30 minutes.

When pie is cool, top with whipped cream or Cool Whip. Garnish with grated German chocolate, if desired.

This recipe sounds weird but it is really good. Easy to do and not expensive. I made this pie many times for church or school bake sales.
