Ten or more Frozen Meatballs
1/4 Cup Olive Oil
One Medium to Large onion
Two garlic cloves chopped
2-3 Large carrots sliced
Six cups Chicken broth
One 15oz can of Diced Tomatoes
One 15oz can of White Beans drained
One six oz Frozen Chopped Spinach or fresh























Directions:
Directions:
Saute onion and garlic in oil
Add broth and bring to a boil
Carefully add the rest of ingredients
Bring back to boil and then to medium heat
Simmer until meatballs are ready (around 15min)
Add salt and pepper as desired
I also add oregano or basil or thyme per preference
Top with generous amount of Parmesan cheese when serving

I use Foster Farm frozen Turkey Meatballs or Trader Joe's frozen
Turkey Meatballs

You can also use vegetarian meatballs and add extra seasoning if needed

Very filling and delicious.
