1 cooked chicken, cubed or 2 10 oz. cans of chicken
1 20 oz. can pineapple tidbits, drained
1 cup coconut
2 cups celery, diced
2 cans Mandarin oranges, drained
4 cups cooked and cooled rice (1 ⅔ cup rice to 4 ⅔ cup water)
1 13 oz. coleslaw dressing or 2 cups salad dressing
2 tbsp. lemon juice
2 tbsp. grated onion
1 tsp. curry powder
salt and pepper to taste

Directions:
To cooked rice, add pineapple tidbits, coconut, and celery. Mix dressing and spices to the rice mixture. Add chicken and mandarin oranges last.
