1 flank steak ( approx 1.5 lbs)
sea salt and fresh cracked black pepper to taste
7- garlic cloves, 4-finely minced, 3-sliced thin
2 cups freshly grated parmesan or Romano cheese
1-1/2 cups Italian parsley, chopped
2 cups Italian seasoned bread crumbs
2 eggs, beaten
1/3 cup olive oil
1 c beef broth
1 c dry red wine
1- 28oz can whole plum tomatoes, crushed with your hands or 3 cups prepared marinara sauce
1/2 tsp red pepper flakes
1 bay leaf
3 fresh basil leaves, torn into pieces

Lay flank steak on a cutting board and season both sides with salt and pepper. Cover the meat with parchment paper. Using a meat mallet or rolling pin, pound steak until its 1/4 -1/3 thick. Remove parchment paper and spread minced garlic over the top. In a bowl, add cheese, parsley, breadcrumbs, eggs and additional salt and pepper to taste. Mix well and spread over meat surface. Roll meat in manner of jellyroll, tucking in the sides to hold in the filling and tie with butcher string. In a large pan, heat oil and brown meat on all sides (10-12 minutes). Transfer to a plate. Add the wine and sliced garlic to the pan and bring to a boil scraping up brown bits. Add beef broth, marinara sauce or crushed tomatoes and additional seasonings. Place beef back into pan and bring to a simmer. Cover and simmer on low heat, stirring and turning occasionally until beef is tender and easily pierced with fork ( 1-1 1/2 hours). Remove from heat and allow to rest 10 minutes, cut string before slicing into 1 inch to 1 1/2 inch pieces; serve with sauce

Note* After searing, you can cook covered in an oven on 325º for 1- 1 1/2 hrs or in crockpot on high for 3-4 hrs. If you cook in oven, you can thicken sauce by removing some of the hot liquid to a bowl and add 1 heaping tsp of flour and mix until smooth then add to the pan and mix. Cook until thickened.

For mini bracioles, you can substitute 1 large flank steak for 6 thin slices of boneless top round (2 lbs) Cut ea. slice in half for a total of 12 pieces. Pound ea.slice to 1/4" thick and stuff as directed above.
Serve this with a side of fresh vegetables, a salad, a plate of prepared polenta or pasta with marinara sauce.
