2 Tbsp Olive Oil
1 medium onion, chopped
2 cloves garlic, minced
3-4 medium potatoes, peeled and cubed (bite size)
2-3 medium zucchini, cubed (bite size)
14oz can diced tomatoes
Uncle Bens rice-make 1 cup serving according to package
Freshly grated parmesan cheese
salt and pepper

In a large sauce pan, heat olive oil and sauté onions until translucent. Add the garlic and sauté for 1 minute. Add the diced zucchini and potatoes, season generously with salt and pepper, mix, then fill the pot with water until the potatoes are completely covered then add the tomatoes, crushing with your hands and let simmer on medium low heat uncovered until potatoes are soft.
In a separate pot make rice according to package directions. Once cooked, add the rice to the potatoes and zucchini pot. Add additional salt and pepper as needed. Mix together and top with parmesan cheese. Serve in shallow bowls and top with more parmesan cheese; enjoy!
