1 bag ready to eat spinach (8 oz)
salt to taste

Dressing:
1/2 tsp of sake or cooking sherry
1/2 tsp of mirin or cooking sherry
3 T. roasted white sesame seeds
1.5 T. soy sauce
1 T. white sugar

Directions:
Directions:
Heat a skillet to low heat. Toast the sesame seeds by placing them into the skillet. When a few of the sesame seeds begin to pop, remove from the heat.

Grind the seeds in mini food processor, grind.

In a small bowl, combine seeds, soy sauce, sugar, sake and marin. Mix well.

Bring a large pot of water to a boil add the pinch of salt.

Add spinach to boiling water and cook for one minute. Drain and soak with cold water to cool.

Chop a bit and add dressing, enjoy
