6 large mild green Chili’s, roasted and peeled
1/2 lb Monterey Jack cheese
6 eggs
1/2 tsp salt
Flour

Oil for frying
Warmed Salsa
Grated Cheddar Cheese
Cilantro (optional garnish)

Directions:
Directions:
Cut jack cheese into 1x3” pieces. Stuff cheese into prepared chili’s. Dust with flour and set aside.

Separate eggs. Beat egg whites until stiff. Fold in 1 tsp flour, salt and egg yolks.

Heat 1/4” oil in skillet. Drop a large spoonful of egg mixture into hot oil. Lay a stuffed chili in the center of the mixture. Top and enclose with another spoonful of egg. Turn and cook until golden brown.

Serve immediately with warm salsa, grated cheddar cheese and cilantro.
