Honey Vinaigrette

• 1 Tbsp. + 2 tsp. Honey
• 2 Tbsp. plain Greek Yogurt
• 1 Tbsp. Extra Virgin Olive Oil
• 1 Tbsp. Balsamic Vinegar
• Pinch of Sea Salt

Salad
• 2 cups of Peaches
• ½ tsp. Olive Oil
• 5 cups Baby Arugula
• ½ cup Blueberries
• ¼ cup Goat Cheese (I use cottage cheese)

Directions:
Directions:
1) Place all the vinaigrette ingredients into a medium bowl and mix well
2) Preheat your BBQ to high. Cut the Peaches in half and remove the seeds. Cut each half into three wedges. Place the Peaches in a bowl and toss with Olive Oil. Grill the Peaches for 2-3 minutes per side. Remove from grill.
3) Place Arugula in a large bowl with the Goat Cheese, Blueberries and grilled Peaches.

Toss with dressing and serve immediately.
