1/2 pound chufa nuts
1 liter of water
1 cinnamon stick (optional)
1 tsp grated lemon peel (optional)
1 cup sugar (try less the first time - you can always add more!)



Directions:
Directions:
STEP 1. Soak the chufa nuts in water for 24 hours.

STEP 2. In a blender, grind the nuts, water, cinnamon, sugar and lemon until you have an even, smooth mixture.

STEP 3. Let it settle for a half an hour.

STEP 4. Press the paste through a strainer to obtain fresh horchata.

STEP 5. Refrigerate for at least an hour.

STEP 6. Finish in the freezer for 20 minutes until slightly slushy.
