1 1/2 C Oil
2 C Sugar
4 Eggs
3 C Grated Carrots
2 C Plain Flour
1/2 C Nuts(optional)
2 tsp Baking Soda
2 tsp Cinnamon
2 tsp Baking Powder
1 tsp Salt

Icing:
1/2 C Butter Softened
8 oz Softened Cream Cheese
2 C Confectioners Sugar
2 tsp Vanilla Extract

Directions:

1. Mix Oil & Sugar
2. Add Eggs 1 at a time
3. Add Carrots
4. Sift Dry Ingredients ( I don't always but it makes for lighter cake)
5. add dry Ingredients little at time...

6 Grease & flour cake pans

Divide batter into the 2 pans

Bake 350 35-40 minute till cooked thru. test with toothpick to see if comes out clean.

Cool

Icing:
Beat softened butter and cream cheese until well blended.
Add powdered sugar and vanilla. Beat until creamy.

This can be made Dairy Free if you Substitute Icing.
