Lemon Blueberry Doughnuts Recipe

1 cup all purpose flour
1 tsp baking powder
¼ tsp salt
⅓ cup milk
⅓ cup sugar
1 large egg
2 Tbsp butter, melted and slightly cooled
2 Tbsp fresh lemon juice
1 tsp lemon zest
1 tsp vanilla extract
⅓ - ½ cup fresh blueberries

Lemon Glaze
1 cup icing sugar
2 - 3 Tbsp fresh lemon juice
Directions:

1. In a small mixing bowl, whisk together the flour, baking powder and salt.
2. In a medium mixing bowl, mix together the milk, sugar, egg, butter, lemon juice, lemon zest and vanilla until fully combined.
3. Add the dry ingredients to the wet and mix until just combined. Gently fold in the blueberries.
4. Place about 3 Tbsp of batter in each well of a greased doughnut pan.
5. Bake at 350ºF for 9 - 10 minutes, until a toothpick inserted into the doughnut comes out clean. Cool for about 10 minutes, then invert onto a wire rack to finish cooling.
6. In a low bowl, whisk together the icing sugar and lemon juice until well combined. Add more lemon juice to thin out the glaze or more sugar to thicken it as neede.
7. Dip each doughnut in the glaze, then return to the wire rack to set.
