4 chicken breasts
1 onion, diced
1 cup mushrooms, sliced
2 tablespoons butter
2 tablespoons sherry
3/4 lb. thin spaghetti, broken into thirds
2 cups Veloute sauce

Veloute Sauce
4 tablespoons butter, melted
6 tablespoons flour
1/2 teaspoon salt
1/2 teaspoon paprika
2 cups chicken broth
1/2 cup heavy cream
1 cup Parmesan cheese
4 dashes paprika

Directions:
Directions:
Preheat oven to 350º. Place chicken in foil with onion. Bake 30 minutes or until tender. Cool and shred. Reserve onion. In a skillet, sauté mushrooms in butter. Add sherry and set aside. Cook spaghetti according to package directions. To make the sauce, melt butter in saucepan over low heat. Stir in flour, salt and paprika. Cook and stir until paste forms. Slowly stir in broth until we’ll mixed. Cook over medium heat until sauce thickens. Remove from heat and stir in cream. Place spaghetti in a shallow 3 quart baking dish. Spoon half of the sauce over the top. Arrange the chicken, mushrooms and reserved onion on spaghetti and top with remaining sauce. Sprinkle cheese on top and dash with paprika. Bake at 400º for 20 minutes. Enjoy!
