1 cup flour
3/4 cup corn meal
1/2 teaspoon salt
1/2 teaspoon baking soda
2 teaspoons baking powder
1/2 cup butter
1/4 cup vegetable oil
1 cup sugar
1/3 cup honey
2 eggs
1¼ cup buttermilk

Directions:
Directions:
Preheat oven to 375º. Place cast iron skillet in the oven while preheating. In a small mixing bowl, combine flour, corn meal, salt, baking soda and baking powder. Melt butter and oil, sugar and honey. Add eggs and buttermilk. Whisk until fully incorporated. Use a spatula to stir the dry ingredients into the wet ingredients. Do not overmix. Remove skillet from oven and grease with butter. Pour the batter into the hot pan and smooth the top. Bake 30 minutes until toothpick inserted comes out clean. Enjoy!
