Ingredients: 3/4 cup sugar 1/4 tsp. salt 1/2 cup all purpose flour 2 cups milk
3 slightly beaten egg yolks 2 tbsp. butter 1 tsp. vanilla

Directions: |
Directions:Mix sugar, salt and flour and gradually add milk. Mix well. Cook and stir over medium heat until mixture thickens and boils. Cook an additional 2 minutes longer. Remove from heat. Stir small amount of hot mixture into three slightly beaten egg yolks. Immediately return to hot mixture and cook for 2 minutes, stirring constantly. Remove from heat.
Add butter and vanilla. pour into cooled baked 9 inch pastry shell.
Meringue: 3 egg whites 1/4 tsp. cream of tartar 1/2 tsp. vanilla
Note: This filling can be used for coconut or chocolate pie.

Notes: Chocolate Cream Pie Prepare vanilla cream pie filling increasing sugar to 1 cup. Mix together 1/4 cup coca mixed with sugar and flour to blend add these together. Add with milk. Top with meringue (3 egg whites) and bake as directed.
Coconut Cream Pie For luscious coconut cream pie, add 1 cup flaked coconut to vanilla cream pie filling. Top with merigue and sprinkle with 1/2 cup coconut. Bake as directed.
Meringue: 3 egg whites 1/4 tsp. cream of tartar 1/2 tsp. vanilla Gradually add 6 tbsp. sugar Beat well until stiff peaks are formed and all sugar is dissolved. Spread on top of pie sealing to edge of pastry. Bake in 350 degree oven for 12 - 15 minutes or until meringue is golden.
