Ingredients: 1 1/2 cup chocolate wafer crumbs 1 cup blanched almonds- lightly toasted (reserve about 8 for garnish) 6 tbsp butter - soft
1 1/2 pounds cream cheese 1 cup sugar 4 eggs 1/3 (1 pint) heavy cream 1/4 almond liquor
2 cups sour cream 1 tbs sugar 1 tsp vanilla

Directions:Crust: combine crumbs, almonds and butter. Pat onto bottom and sides of buttered 9 1/2 inch springform pan.
In large bowl, beat cream cheese and sugar until light and fluffy. Add eggs , one at a time beating well after each. Add heavy cream and almond liquor ( or your choice). Beat until mixture is light. Pour batter into shell and bake in middle of a 375F oven for 30 minutes. Transfer to a rack and let stand 5 minutes ( cake will not be set.
In a small bowl combine, sour cream , sugar and vanilla. Spread evenly on cake. Bake cake 5 minutes more. Transfer to a rack and let it cool completely. Chill it lightly covered overnight. Remove sides of pan and transfer cake to plate. Press slivered almonds around top edge to decorate. |

Notes: Mom and I found this recipe in Gourmet Magazine in 1974, back in the day when I enjoyed dairy and gluten. It is one dessert I can still taste!
It is fun to make and definitely a recipe to keep around to make for others. (G/F, D/F variations of 'cheesecake' are included in this collection.)
