Oatmeal Shortbread Recipe

1 3/4 cup flour ( either regular or gluten free mix)
1 teaspoon baking powder
1/4 teaspoon salt

1 cup soft butter
3/4 brown sugar
1/2 teaspoon vanilla
1 1/2 cup rolled oats ( gluten free)

Sift dry ingredients together.
Cream butter and sugar together till fluffy and creamy. Slowly add flour till well blended. Add oats and work on floured board till smooth. ( Can do these latter steps in a food processor).

Chill dough for about 15 minutes.
Roll out on parchment paper or silicone tray.
Cut with a cookie cutter
Bake in 325F oven for 20 minutes. They will be very lightly browned.
