Ingredients: 1 3/4 cups finely ground rice flour ( or gluten free flour mix) 1 cup granulated sugar 1 cup butter ( or non dairy substitute) 1 egg lightly beaten 1 cup raspberry jam 1 cup chocolate chips 3/4 cup sliced almonds

Directions:Preheat oven to 350F. Grease a 13 X 9 baking dish. In a large bowl or food processor: thoroughly combine flour and sugar. Cut in margarine until mixture is crumbly. Add egg (and almond extract); mix until thoroughly combined. Set aside 1 cup of flour mixture for topping. Press remaining flour mixture into prepared dish. Evenly spread raspberry jam over dough. Combine reserved flour mixture chocolate chips and almonds by pulsing quickly in food processor. Evenly spoon topping over raspberry jam. Press with the back of a spoon. Bake 40 minutes until lightly browned. Cook in pan. Store in covered container. |

Notes: This 'traditional' recipe adapted very well to having rice flour substituted for the wheat flour. Bulk Barn 1-1 mix also works well.
