½ c. Crisco or ¼ lb. margarine
1 c. boiling water
1 c. flour
¼ tsp. salt
4 eggs, unbeaten

Cream Filling:
½ c. sugar
5 T. flour
Dash of salt
2 c. milk
2 egg yolks, slightly beaten
1 tsp. vanilla

Directions:
For puffs, bring Crisco and water to boiling point in saucepan. Sift flour & salt together. Add to water all at once & beat vigorously until mixture is thick & smooth & comes away easily from side of pan. Remove from fire. Add eggs, one at a time, beating thoroughly after each addition until mixture is smooth & blended. Drop mixture from T. about 2" apart on greased baking sheet (or parchment paper). The mixture should hold its shape & not spread. Bake in 450º oven for 10 minutes, then reduce heat slightly to 400º for 20-25 mins. longer. Cool. Slit each puff & fill with Cream Filling. Dust with powdered sugar if desired.

For filling, mix sugar, flour & salt together thoroughly. Add milk & mix well. Add egg yolks & blend. Place over hot water & cook until smooth & thick, stirring constantly, about 10-15 mins. Cool, stirring occasionally to prevent a skin forming. Add vanilla. Note: filling will thicken while cooling (can place in fridge to thicken also).

Dad and Nana particularly love Grammy's cream puffs. I make 12 large ones with the recipe, but I know Grammy made them a lot smaller so they’d stretch further. They are definitely best eaten the first day (which isn’t hard to do!).
