CORNBREAD
1 box Jiffy corn muffin mix
1/3 cup milk
1 egg
1 small can dice green chilis
1 can creamed corn

MEAT
1 lb. ground beef
1 teaspoon cumin
1 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon pepper

TAMALE PIE
1½ cup enchilada sauce
2 cups shredded cheese

Directions:
Directions:
Preheat oven to 400º. Whisk together muffin mix, milk and egg. Gently fold in chiles and cream corn. Pour into cast iron skillet. Bake until set, 20 to 25 minutes. While cornbread is baking, combine beef with spices and sauté in a skillet until fully cooked, about 10 minutes. Drain and set aside. Once cornbread to done, reduce oven to 350º. Poke holes in cornbread and pour enchilada sauce over it. Top with ground beef and shredded cheese then cover with aluminum foil. Bake 20 minutes. Remove foil and back 5 to 10 more minutes. Enjoy!
