Tomato sauce (recipe below)
2 heads of cabbage
1 1/2 lb ground pork
1 1/2 lb ground beef
2 onions, diced
1 bell pepper, diced
3 cloves garlic, minced
Salt & Pepper
Tony Chachere's seasoning
Garlic & onion powders
Paprika
Dried parsley
A few dashes Worcestershire sauce
2 small cans V8
Cooked rice- about 2 cups
Parmesan cheese


For the Tomato Sauce-

28 oz can tomato purée
15 oz can tomato sauce + 1 can water
Oil- a couple of TBSP
1 large onion, diced
3 cloves garlic, minced
S&P
Tony Chachere's seasoning

For the cabbage-

Pull off outer leaves, core, and wash well. In a large pot, steam the cabbage until outer leaves are tender. Remove from pot & remove leaves until you get to the raw leaves. Repeat the process until you have all of the big leaves removed. Drain leaves well then cut out the hard vein in the center. Chop up the inside of the cabbage to add to the filling.


For the Filling-

Combine ground pork & beef. Season liberally with S&P, Tony's, garlic & onion powders, and paprika. Brown & drain off the fat. Return to the pot and add onion, bell pepper, garlic, chopped cabbage, V8, parsley, and Worcestershire sauce. Cover and cook until veggies are tender. Stir in rice taking care not to add too much or your filling will be dry.


For the tomato Sauce-

1. Cook onion in oil until tender, then reduce the eye to a medium low flame. Add garlic & cook until onions are translucent. Add tomato purée and sauce, water, & seasonings. Cover and simmer for 1 hour.

To assemble-

2. Grease your baking pan. Cover the bottom of the pan with tomato sauce.
Lay out a cabbage leaf, spoon 2 heaping tablespoons of filling into the center, fold in the sides, and roll tightly. Place in the baking pan- seam side down. Cover rolls with tomato sauce and sprinkle with grated Parmesan cheese.

3. Cover with foil and bake at 350º for 30-40 minutes.
