Preheat to 425º.
Line cooking sheet with parchment paper.
Allow raw chicken to sit at room temp for 30 min.

4+lb whole chicken, backbone removed, sternum split, flattened.
2 lb med red potatoes, quartered
3 med carrots, peeled, quartered
8 oz Brussels sprouts, halved
Tony's to taste

Flavored butter:
4 tbsp butter softened
1 tbsp olive oil
1 tbsp parsley, finely chopped
2 garlic cloves, minced
1 tbsp lemon juice
salt & pepper

Directions:
Directions:
Spatchcock and season chicken.
Stuff 2/3 butter under skin at legs, thighs, breast.
Spread remaining over chicken.
Place chicken in pan, breast up, flattened.
Arrange vegetables around.
Season all and sprinkle with olive oil.
Bake uncovered for 45 min - 160ºF.
Remove, let rest uncovered 10 min before serving.
