1 cup + 2 T all-purpose flour
1 t baking powder
⅔ cup of milk
2 eggs beaten
2 T butter
4 slices of bacon, cooked and crumbled
2 cups of shredded uncooked sweet potatoes
oil
maple syrup

Directions:
Directions:
Combine flour and baking powder; stir well. Add milk, eggs, and butter. Stir until smooth. add bacon and sweet potatoes, stirring well. Heat 3 to 4 inches of oil to 375º in a Dutch Oven. Carefully drop batter by rounded tablespoonfuls into the hot oil. Cook only a few at a time, turning once. Fry for 2 minutes or until fritters is golden brown. Drain well on paper towels. Serve warm with maple syrup.
