2 pkgs (1/4 oz) active dry yeast
1/4 c warm water (110º to 115º)
2 c warm buttermilk ( 110º to 115º)
5 c all-purpose flour
1/3 c sugar
1 T baking powder
1 tsp baking soda
1 T salt
1 c shortening
Melted butter

Directions:
Preheat oven to 450º.

Dissolve yeast in warm water. Let stand 5 minutes. Stir in buttermilk; set aside.

In large bowl, combine flour, sugar, baking powder, soda and salt. Cut in shortening with a pastry blender until mixture resembles coarse meal. Stir in yeast/buttermilk mixture and mix well.

Turn onto a floured surface; knead lightly 3-4 times. Roll to a 1/2 inch thickness. Cut with a biscuit cutter or glass jar. Place evenly on a lightly greased baking sheet. Cover and let rise in a warm place about 1 1/2 hours.

Bake 8-10 minutes. Lightly brush tops with melted butter.

Note: If you do not have buttermilk available. Use 2 cups warm milk with 2 T of vinegar or lemon juice. Let stand 15 - 30 minutes; overnight is better.
