1 Venison Heart
Salt
Water
1 cup whole wheat flour
Pepper
2 Eggs
Cooking oil

Directions:
The night before, soak heart in salt water
When ready to cook, rinse thoroughly. Be sure
to clean out any blood cloths. Trim white membrane from muscle
Slice heart into 1/2 inch slices
Coat heart slices in flour, then egg, and additional flour to create a good coating
Heat oil in a cast iron skillet, just enough to
cover the bottom. The slices of heart can then
be fried in the hot oil until each side is nicely
browned- about 4-6 minutes per side depending on how hot the oil is
