3 C. blueberries
1¼ C. sugar
1¼ C. light brown sugar
4 large eggs
1 C. oil
1 tsp. vanilla
2 C. sour cream
1 tsp. baking soda
1 tsp. salt
coarse sugar for top

Directions:
Directions:
1. Heat oven to 400º. Grease 24 muffin cups with paper liners.
2. In a large bowl, add eggs and beat. Slowly add sugars beating until smooth. Add oil and vanilla. Blend.
3. In a separate bowl, mix flour, salt, and baking soda. Add flour mixture and sour cream to egg mixture, alternating between the two stirring until blended. Do not over mix. Lastly, fold in blueberries. Again, do not over mix.
4. Fill muffin cups ¾ full. Sprinkle with coarse sugar.
5. Bake for 20 minutes. Allow muffins to cool.
