4 quarts zucchini, peeled & sliced
6 small onions, sliced
2 green peppers, sliced
2 whole cloves garlic
½ C. salt
crushed ice
5 C. sugar
1½ tsp. turmeric
2 tsp. mustard seed
1½ tsp. celery seed
3 C. vinegar

Directions:
Directions:
1. Put zucchini, onions, green pepper, and garlic in a large bowl. Pour salt over vegetables and cover with crushed ice. Mix and let stand 3 hours. Drain, rinse, and drain again.
2. Combine remaining ingredients in kettle and bring to a boil. Add zucchini mixture just to boiling.
3. Put into sterilized jars and seal.
