Apple Rum Cake Recipe

Cake:

4 eggs
3 apples, peeled and chopped two red delicious and one Granny Smith
¼c apple juice
¾c gold rum
½c canola oil
1 (18.25oz) yellow cake mix Duncan brand
1(1oz) box instant vanilla pudding mix


Glaze:

1c sugar
¼c water
1 stick butter
¾c gold rum

Cake:

Preheat oven to 350º.

Grease and flour 1 bundt pan Eggs, oil, apple juice, one mixer just until Incorporated. Mix in pudding and cake mix. Beat on medium speed about 3-5 minutes just until you get a smooth texture. Stir in apples. Pour into pan and bake 40-45 minutes.the cake should have a light golden color.

Glaze:

Melt butter in saucepan, add sugar and water, bring to a boil. Dissolve sugar then remove from heat and let cool slightly then add rum. Pour into glass measuring cup set aside.

When cake is done remove from oven, leave in pan. Gently poke holes into cake with a skewer. Gradually pour half the glaze over the cake filling in all the holes. Once the cake has soaked up all the glaze turn the cake over on to serving plate, removing pan. Gently poke more holes on top side and slowly pour remaining glaze over cake.
