1 c spiced pear juice
1/8 c butter
1/4 c shortening
1/2 t salt
1/2 c B. sugar
1 c raisins
1 1/2 c chopped pears, mixed with 1/2 tsp cinnamon, 1/4 tsp cloves, and 1/4 tsp allspice
1/2 t fennel seeds
1 t cinnamon
1 eggs
1/2 cake yeast
2 T + 2 t lukewarm water
1 1/2 t sugar
6 c flour

Scald the pear juice. Add the next 8 ingredients . Cool. Add the eggs, yeast, water, and sugar. Add the flour and mix well. Let rise in a covered bowl overnight.

In the morning punch down the dough and put into 2 greased bread pans, using a spoon as the dough is too sticky to handle.

Let rise until doubled. Bake in a hot oven for 10 minutes and then a moderate oven for 50 more

It is a fruitcake like bread that is served both hot or cold. The use of the spiced pears is a tradition in German baking.

To make spiced pear juice add 1/8 tsp cloves, 1/2 tsp cinnamon, and 1 t lemon juice to 2 c pear juice.

Canned pears in 100% juice can be used by draining and allowing to sit on paper towels before chopping and tossing with spices.
