1 peck fresh beets
6 cups water
6 cups vinegar
6 cups sugar (can be reduced to 4 cups if desired)
2 tbsp pickling spices

Directions:
Directions:
Clean and cook the fresh beets until tender. Let cool until you can handle them; then skin beets by rubbing with your hands (may want to wear disposable gloves unless you want to have purple hands for a few days). In a large saucepan, add water, vinegar, sugar, salt and pickling spices. Bring brine to a boil. Once beets are skinned, cut into chunks or slices and pack into sterilized jars. Pour brine over beets; then seal the jars. Hot water bath for 20 minutes.
