This here is a recipe for pumpkin pie what am;
COMBINE 1/2 CUP BROWN SUGAR WITH 1/4 CUP WHITE SUGAR, 1 TEASPOON CINNAMON, 1/2 TEASPOON GINGER, 1/4 TEASPOON ALLSPICE AND 1/2 TEASPOON SALT.

MIX IN 1-1/2 CUPS OF PUMPKIN AND 2 BEATEN EGG YOLKS. THEN STIR IN 3/4 CUP OF MILK AND 3/4 CUP OF THIN CREAM (1/2 & 1/2) OR EVAPORATED MILK. LAST FOLD IN TWO WELL BEATEN EGG WHITES. THIS MAKES ENOUGH FILLING FOR A 9- INCH PIE.

ROLL THE CRUST AT LEAST 1 INCH LARGER THAN THE PIE TIN, AND BUILD IT UP AROUND THE EDGE. THIS WILL HOLD THE FILLING IN GOOD AND DEEP. THEN TO MAKE CERTAIN THE CRUST CANNOT 'SOAK' BRUSH IT WITH MELTED FAT OR THE UNBEATEN WHITE OF AN EGG. PUT INTO THE PIE TIN.

LAST, CAREFULLY POUR OVER THE ENTIRE SURFACE OF THE FILLING A THIN COATING OF MILK. THIS WILL BAKE IN A GLOSSY SKIN WHICH WILL BRING YOUR PIES FROM THE OVEN SHINING PERFECT.

START BAKING IN A HOT OVEN (ABOUT 425 DEGREES). THIS BAKES THE CRUST QUICKLY. HOLD THE OVEN AT THIS TEMPERATURE FOR 15 MINUTES. THEN TURN IT DOWN TO 325 DEGREES. THIS BAKES THE FILLING SLOWLY AND PREVENTS 'CRACKING'. THE PIE IS READY TO REMOVE FROM OVEN WHEN A POINTED KNIFE (THRUST INTO THE CENTER OF THE PIE) COMES OUT 'CLEAN'

We sure do miss Grandma and Grandpa Morris. I can still hear everyone in our family laughing at his silly jokes as we dined at a very long table for least 15 people. This pumpkin pie was always served at Thanksgiving and Christmas dinners along with Dad's (Victor Marine) favorite French Apple Pie.
