1 cup Chicken, cooked and cut in small pieces
1 cup Macaroni, cooked
½ cup Green pepper, chopped
¼ cup toasted almonds
1 cup Fresh Pineapple chunks
¼ cup Mayonnaise
⅛ tsp salt
Pinch ground Red Pepper

Mix all ingredients and chill well. Serve in hollowed pineapple halves and garnish with paprika if desired.

Freeze wedges on popsicle stick for a coo treat

Chop in fruit salad garnished with mint.

Skewer with cheese and other fruits for an easy appetizer or dessert.

Pineapple: This tropical fruit is best when it has a slight golden or reddish background color and light aroma. Leaf fronds should be small compared to the fruit. Fruit should be heavy for its size and will not ripen once harvested, but its acidity will decrease a bit. Do no use raw pineapple in gelatin. A natural enzyme in the pineapple will keep gelatin from setting.
