Ingredients: 4 medium North Carolina Yams (about 2¼ lbs) Vegetable Oil Salt, optional

Directions: |
Directions:Wash and dry yams. Pare and cut into lengthwise strips, approximately ½-inch thick. Heat oil in deep fat fryer or kettle to 350º. Fry medium amount of yams 5 minutes or until yams are brown and tender. Repeat with remaining yams. Remove from hot oil and drain on paper towels. Sprinkle with salt if desired. |

Directions:Wash and dry yams. Pare and cut into lengthwise stripe about ½-inch thick. In large, deep skillet, heat 1½-inch deep vegetable oil to 350º. Add yams to cover bottom of skillet; fry 5 minutes or until brown and tender. Repeat with remaining yams. Remove from hot oil and drain on paper towels. Sprinkle with salt if desired. |

Directions:Wash and dry medium sized North Carolina yams. Prick with fork. Place in shallow baking pan and bake in 400º oven for 45 to 55 minutes or until soft. Serve with salt and pepper to taste or lemon butter sauce. |

Directions: |
Directions:Select North Carolina yams that weigh 8-9 oz each. Wash and dry; prick with fork. Arrange yams on paper towels on the corners of microwave oven. Yams placed in the center of the oven will not cook as rapidly. Bake 5 minutes for 1 yam, 10 minutes for 2 yams, and 20 minutes for 4 yams, until tender when pierced with a fork. Cooking times varies with variety and size of yam. Half way through cooking time, turn yams over. Let stand 4 to 5 minutes. |
