3 pkg yeast
4 tsp salt
1/2 cup shortening
5 5/8 cups water
4 1/2 cups flour
1/2 cup brown sugar
5 cups whole-wheat flour

Directions:
Directions:
Soak yeast in 7/8 cup water with small amount of sugar

Mix sugar, salt, shortening in 2 1/4 cups boiling water

When shortening is melted add 1½ cups cold water

Mix in small amount of whole-wheat flour and yeast

Stir in white flour with small amount of whole-wheat flour

Keep adding whole-wheat flour a little at a time until dough is ready to knead

Put dough on floured board and knead for 5 minutes

Put in greased bowl & let rise - punch down and rise again

Divide into 4 even sections - shape into loaf shape, put in loaf pan and let rise

Bake 14 minutes at 400* and then lower oven to 350* for about 30-45 minutes
