1 Eggplant
1 Zucchini or summer squash
6 tomatoes
4 tbsp. Oil
1 onion, finely chopped
1 clove garlice, minced
1 bay leaf
1 tbsp Parsley, chopped
cup Parmesan cheese grated
Salt and Pepper, to taste

Directions:
Directions:
Peel eggplant, dice, cook 10 minutes in boiling water, drain. Dice squash, cook 10 minutes in boilding water, drain. Peal tomatoes, cut in pieces. Put oil in saucepan, brown onion, add other ingredients except cheese. Cook until vegetables are tender (about 20 minuts) Taste and add more salt and pepper, if needed. Place in shallow baking dish, sprinkle with cheese and brown under broiler.
