Or Orange Slice Bars

2 sticks butter, room temperature
3/4 c brown sugar, packed
3/4 c white sugar
2 eggs
1 tsp soda
1 dash salt
2 1/4 - 2 1/2 c flour
2 - 2 1/2 c cut-up gumdrops

Directions:
Directions:
In a large mixing bowl, cream together 2 sticks butter at room temperature (not melted) with 3/4 c white sugar and 3/4 c brown sugar.
Add 2 eggs and beat well.
Add 1 tsp soda, dash of salt, 2 1/4 c - 2 1/2 c flour. Add your flour to the touch, as some flours are fresher than others and need a little more. But don't use too much, or the bars will be dry. 2 1/4 is probably okay. Beat well.
Cut with your scissors 2 to 2 1/2 cups of fresh gumdrops or fruit slices and add this to the dough. I cut each fruit slice into about 6 pieces.
Spread dough in a greased cookie sheet and cook at 350º for about 20 minutes.

Frost the top with a small amount of cream cheese or sour cream butter frosting.
When you store these, put parchment paper between the layers so they don't stick together.
 

Sour Cream Butter Icing

1/2 cup butter, softened
2 Tbsp sour cream
4 cups powdered sugar
2 tsp vanilla
food coloring (if desired)
1-2 Tbsp of milk, to consistency (I used more sour cream to get it to the right consistency--you could also use buttermilk)

Cream butter, then add sour cream and beat. Add vanilla and beat, then carefully add in the powdered sugar. It will be dry, so start adding in the milk or sour cream or buttermilk here to get it to the right consistency for frosting. You want it spreadable, but you want it to ultimately dry out on the cookies so it won't be too messy.

I think if you are making orange slice bars it might be very good to add a little orange zest in the icing (or even just a touch of orange juice as your liquid). I have not tried this, but I think it might begged.

Cook at 350 for about 20 minutes. Don't cook too long, or the gum drops will get hard and tough!

Gum drop bars are a Christmas favorite of Bobby's. He remembers his neighbor, Ma Reed (Zoe Nell's mother-in-law) making them every Christmas when he was a little boy (70 years ago!!) He likes more gum drops, rather than less!

The only small gum drops nowadays are spice drops. Years ago, you could buy small fruit-flavored gum drops, but now gum drops or slices have to be cut up to make them small (use sugar to keep scissors from sticking). I do not care for these bars made with spice drops. Another variation of this bar cookie is to use only orange slices.
