1 pound starchy or all purpose potatoes
1/4 cup unsalted butter, room temperature
1/4 cup heavy cream
1/2 tsp. salt
1 to 1 1/2 cups all purpose flour

Directions:
Directions:
Peel potatoes and cut them in large chunks. Place in small saucepan and cover with cold water. Bring the water to a boil. Gently cook until soft, 10-12 minutes. Drain the potatoes and transfer to a mixing bowl.
Mash thoroughly or with masher or potato ricer
Add butter, cream and salt, continue mixing
Refrigerate potatoes overnight or up to 3 days
When ready to make, mix the potatoes with 1 cup flour, at first they will be crumbly but it will come together
Roll into balls, cover with a dishtowel.
Roll out the dough and grill turning frequently
