3/4 cups vegetable shortening
1 cup sugar
2 eggs
2cups mashed bananas (3 lrg bananas)
2 cups flour
1 tsp baking soda
1 tsp salt

Directions:
Directions:
Cream shortening with sugar, beat in eggs one at a time. Add bananas and sift in the dry ingredients slowly. Preheat oven to 350 degrees. Sprinkle sugar on top of the muffins before baking.
Bake for 15 minutes or until toothpick comes out clean from center of muffins.
