10 ounce pkg frozen, chopped spinach(cooked and thoroughly drained)
2 TBSP herbed cream cheese (cream cheese and garlic)
4 chicken thighs, deboned and pounded thin
¼ tsp. salt
1/8 tsp. pepper
Nutmeg
¼ c. flour
1/3 c. plain bread crumbs
1 egg
1 TBSP vegetable oil
1 TBSP butter or margarine

Place ½ c. spinach in bowl. Combine with cheese and mix thoroughly. Place chicken on waxed paper on counter skin side down with wider sides toward you. Sprinkle with salt, pepper, and nutmeg. Fill with approx. 1-2 TBSP of cheese mixture and roll up. Place flour on one plate, bread crumbs on second, and beaten egg in another.

To coat chicken: Dust with flour and shake off excess. Dip into egg to coat completely, then roll in bread crumbs, pressing the crumbs into the chicken. Refrigerate 1- 2 hours or freeze 15 minutes.

To cook chicken: Heat oven to 400 degrees. In a 10 in skillet, heat oil and butter over moderate heat. Add chicken and brown 2-3 minutes each side. Transfer to a shallow baking dish and bake 15 – 20 minutes until cooked through. Serve immediately.
