small loin lamb chops (the thick ones with a round bone)

plain or garlic olive oil

oregano

Directions:

Using a cast iron pan (though we have used others), drizzle olive oil in bottom on the pan. Roll lamb chop in olive oil to coat. Remove to a plate.

Bring heat up to medium high.
Set chops in pan.

Sprinkle top of lamb chop with oregano.

Once bottom is browned , flip over; add oregano to this side
and cook about half the time it took for the first side, so you get a medium rare chop. Cook longer for medium or well done.

One of the fastest meals you can make...and tasty. We like to keep the chops medium rare as we tend to have a few leftover and when we go to reheat them we don't want them to be overcooked.
