Zucchini Fritter Recipe 2/2/2019

6 zucchinis - shredded and squeeze drained
8 oz - grated pecorino
8oz - gf flour
5 eggs beaten
Garlic salt and pepper to taste
.5 teaspoon baking soda


Directions:
Directions:

Shred and squeeze the zucchini over a colander so that it drains well. The zucchini should be damp but not wet. In a large mixing bowl add the flour, cheese, salt, pepper and baking soda. Mix to coat the zucchini evenly. Then add the beaten eggs until it forms a thick paste.
Form small 4" patties and bake leaving enough room for the patty to expand.

Set oven to 375

Line cookie sheets with aluminum foul and spray with oil.

Flip at 30 mins. Take out at 45 to 48mins
