2 lbs bacon (choose carefully, less fat is best)
1/2 - 1C brown sugar

Preheat oven to 325

Line 2 baking sheets with 2 layers of foil
Place a cooling rack on each one, spray with oil

Lay out bacon in one layer, perpendicular to the wires to keep bacon from slipping through (duh)

Sprinkle and lightly press sugar onto bacon, sprinkle with pepper (you can add any other spice as well)

Bake 10 min

Turn bacon over and repeat, sprinkling with sugar and pepper. Do this as many times as you like, depending on your sweet tooth.
When bacon is brown and crisp, remove from racks immediately onto parchment to cool.
