2 cups cauliflower flowerets (1 medium size cauliflower)
1 (14 ½ oz.) can chicken broth
½ cup finely chopped red bell pepper
1 ½ tsp. finely shredded lemon peel
1 ½ cups half and half
1 lb. peeled medium shrimp
2 tbsp. chopped fresh dill
1 teaspoon of liquid crab/shrimp boil

In a large saucepan combine cauliflower, broth, bell pepper and lemon peel. Bring to a boil; reduce heat. Cover and simmer for 8 -10 mins. or until cauliflower is crisp-tender.

Stir half and half into cauliflower mixture. Mash or blend to make a creamy soup.
Bring to a boil.

Gently stir in shrimp and dill and juice from ½ lemon and liquid crab boil. Heat through, until shrimp are cooked. Season with salt and pepper. Serve immediately.
