3 to 4 cups peeled and cubed potatoes
2 or 3 celery ribs, cut into 1/2 pieces
2 medium carrots, sliced
1 onion, chopped
1 tsp chicken bullion
1 1/4 cups water
1 tsp dried parsley
1 1/2 tsp salt
1/2 tsp pepper
1/2 tsp dill weed (optional)
2 1/2 cups whole milk
4 Tbsp butter
3 Tbsp all purpose flour

Directions:

In large pot place potatoes, celery, carrots, onion, parsley, salt, pepper, bullion, dill weed if desired and water. Bring to a boil and reduce heat to a simmer. Simmer for 25 minutes. Mix flour and 1/2 cup milk until smooth. Add 2 cups milk and flour mixture to soup pot and bring back to a simmer while stirring until thickened. Simmer for about five minutes more then serve with crackers and a salad.
